Highland Park Distillery on Orkney describes itself as ‘the Northernmost Scotch Whisky Distillery in the World’. It was founded in 1798 and stands on a hill above Kirkwall with splendid sea views although the distillery itself is not spectacularly beautiful. The ‘old’ kiln is over 100 years old, the ‘new' one a mere 80! Its consistently cool temperatures and moisture levels provide an ideal location for maturing Scotch Whisky. The wash backs were filled with hot water during the last war to allow some of the 60,000 servicemen on Orkney to bathe.
