Out of sight, in a remote cove near Port Askaig lies Caol Ila, hidden gem among Islay's distilleries since 1846. Not easy to find, Caol Ila's secret malt is nonetheless highly prized among devotees of the Islay style.
Nose: Light and crisp, with lemon, peppermint and a light ash note that's so characteristic of this distillery.
Palate: A gentle biscuity sweetness, lingering hazy smoke and lightly salted, maritime touch.
Finish: Only now does the Islay provenance of this malt become clear, with a lasting wood smoke alongside white pepper and tobacco.
